Show #67 How to Make a Fish Sandwich





There were two sandwiches I loved to get at trusty old McDonalds growing up. Heck that’s pretty much how it still is when I occasionally slide into a McDonalds. 

The Big Mac and the Filet O Fish. I don’t eat at McDonalds often but I swear this sucker has gotten crazy small over the years.

McDonalds has the balls to only toss a ½ slice of cheese on these boys now. What’s up with that? 

Anyway, this sandwich has been done a lot all over the internet and often with panko bread crumbs. Now I love panko like my brother, but it isn’t right in every single application.

Here I went with crushed corn flake crumbs and I'm glad I did. I like to buy a box of corn flakes and crush them myself. The ones they sell as crumbs seem different somehow and end up being more expensive. Although I never flipped it over and compared ingredients I wouldn’t be surprised there is a difference. 

I use the corn flake crumbs because they add just an extra hint of flavor, color and the perfect texture I was looking for. Fish doesn't take long to cook and since corn flakes are already cooked there is no danger in over cooking the fish.

 You can use cod or any number of white fish for your sandwich and it would basically taste the same but for some reason we always have two things in our freezer, and that’s chicken and tilapia. 

These patties also freeze well, prepare the recipe, freeze for an hour individually, then pull them out and put in a freezer bag toss back in the freezer for up until a month.

 Fry straight from frozen whenever you want a tasty Filet O Fish style sandwich. These fish patties will be crunchy on the outside, moist in the middle. These boys also makes for great fish sticks for the kids. Just cut them into strips and freeze.

Fish Sandwich similar to Filet O Fish

Ingredients
Makes 2 Sandwiches

2 Tilapia fillets
1 cup of crushed corn flake crumbs
2/3 cup of flour
1 egg
1/4 t salt
1/8 t black pepper
2 slice of American Cheese Singles
3T tartar sauce
2 hamburger buns
a pinch or two of more salt to lightly salt the fish

Add egg and milk to a bowl larger enough to submerge fish, stir well with folk. Put flour in a shallow dish large enough for the fish and add the salt and pepper and do the same with the cornflake crumbs.

If using tilapia cut thin parts of the end and the side so you have fish patty shape, lightly salt both sides of the fish. Dip fish in the flour shaking off all excess, then dip in the egg and shake off excess, then dip in corn flake crumbs until well coated, shake off excess and dip back in egg and finally back into the crumbs.

Put coated fish pieces on a plate and set uncovered in the freezer for 1 hour. Fill a frying pan ¼ up the way with vegetable oil and let it get to 350 degrees.

Cook the fish to deep golden color, then flip and cook the other side. Now put your sandwich together, on the bottom bun goes the cheese, then a fish patty, tartar sauce, then the top bun.

    I don't go to McDonald's often either, but when I do, it's the Fillet-O-Fish that I get. I'm glad that you created a version that is healthier than McDonald's and, I'm sure, more flavorful. I love your site and the videos!
